One of the things about living simply is that we don't go out to eat. It is costly, fattening and we only have a few restaurants in the area. My nearest McDonald's is over 10 miles away!
I cook and bake just about every day and it gets boring eating the same thing. Evidently I'm a pretty good cook (at least that it what everyone tells me) so I thought I would share some of my recipes. I'm a creative girl so can't leave a recipe alone as I always have to make it my own. I'm not one to run to the store if I don't have something specified - I just figure something else to use from the pantry or fridge.
My first recipe is an absolutely delicious Banana Cake recipe. The original recipe was for a Pumpkin Cake (which is also heavenly) but I was looking for something to use up some old bananas. This is also a one bowl recipe so less dishes to wash. Feel free to experiment and make it your own!
Marie's Banana Cake Recipe
2 Cups All Purpose Flour
3 teaspoons Baking Powder
2 teaspoons Baking Soda
1/4 teaspoon Salt
2 teaspoons Ground Cinnamon
Dash of Allspice
1 Cup Splenda (or regular Sugar)
1 Cup Brown Sugar
1 1/4 Cups Oil (I use Extra Virgin Olive Oil)
1 teaspoon Pure Vanilla Extract
2+ cups Mashed Bananas (the riper, the better!)
Add 1 at a time:
4 Eggs (at room temperature)
1/4 Cup Shredded Coconut
1/2 Cup Chopped Walnuts
Pour mixture into a rectangular baking pan sprayed with Pam. Bake at 350 degrees for approximately 30 minutes or just until toothpick inserted comes out almost clean. Don't over bake or it will be dry!
Once cake cools you may top with your choice of toppings:
Purchased or homemade cream cheese frosting and sprinkled with 1/2 Cup of chopped Walnuts
or Sprinkle with Powdered Sugar or make Powdered Sugar out of Splenda by putting 3/4 Cup Splenda into blender with 2 Tablespoons of cornstarch - quickly blend - you have made Powdered Sugar!
